I am delighted to reflect on the incredible and invigorating experience of being a part of this year's Truffle Kerfuffle. The event was a remarkable opportunity to showcase my truffle-inspired culinary creations, including the delicious and rich truffle tartes and cookies. Meeting all of you, my wonderful customers, and witnessing your reactions as you tasted my creations was the icing on the cake.
One of the standout moments of the Truffle Kerfuffle weekend was undoubtedly the live demonstration that took place. It was a true highlight for me to have the opportunity to guide you all step by step through the creation of truffle-inspired desserts.

Being a Pastry Chef, I'm always working with different cooking appliances to create perfection and I've been given a terrific opportunity to demonstrate my skills to you.
The lovely team at The West Australian Food Guide are hosting a showroom demonstration from 10:30am-12:30pm at Winning Appliances O'Connor. This will be a summer-inspired dessert with a twist of Tartes, to show you what the best appliances can create in the kitchen.
It will be great chance to get a feel for the appliances in person and learn more about cooking up a dessert storm.
This will be my second year helping to support Fremantle's Long Table Dinner this Saturday 26th November, by serving up a delicious feast along side Fremantle's best chefs.
There will be over 650 people dining under the stars to raise money for the vulnerable, this will be a wonderful 3 course experience that is all centered around helping those who need it the most.
It's a fast-selling event, so I hope you already bought tickets, as I can't wait to showcase my delectable dishes on the night to you.

From 15th October, my 'Poisoned Potion' soufflé pancake will be available every day to enjoy with friends and family to get you all in the Halloween spirit.
This one is for all you mint lovers! The 'Poisoned Potion' is topped with Piraya's Pistachio Pashmak, and Mint Ice Cream—all drizzled with Mint Anglaise and sitting on a bed of Oreo Crumbs.
Come down to Kumo to indulge in my new LIMITED EDITION creation, Kumo has even created their own speciality drink, 'Witches Blood' that pairs with the new pancake!
Learning to stay connected and passionate about the world of hospitality, Amanda will be speaking about her experience and offering her tips on this session’s topic. Health Mind Menu have created a FREE online support session, focusing on meaningful connectedness. They are an industry led initiative helping to improve the lives and mental health of those working in the hospitality industry.
There will be a live stream 14th September, 6:30-7PM, online via Zoom or you can register and receive a recording of the workshop.
Perth SkillsWest Careers and Employment Expo is WA’s biggest event of the year, showcasing over 140 organisations and careers to the public from school students to those wanting a career change. This year Amanda shared her love of baking among other aspiring pastry chefs, demonstrating her fine culinary skills and rich experience in the industry.
Amanda catered for the event and Emyprwan Education was a proud sponsor. Salon Vernissage is the highlight of PICA’s annual donor program, and this year launches Out of Bounds – a dynamic group exhibition that celebrates the diversity, talent and boundary-stretching practices of artists living and working on this land.

To celebrate one year of making Perth’s favourite cheese tarts, I’ve teamed up with Kumo Perth and put my own twist on their famous soufflé pancakes!
From Friday the 22nd July, my “Moonlight Birthday” soufflé creation will be available everyday from 7:30PM, for a limited time only.
“Moonlight Birthday” is a Smokey Charcoal Soufflé Pancake with Black Sesame Cheese, Strawberries, Balsamic Glaze & Rose Pashmak. Kumo has also created two Black Sesame drinks that pair perfectly with my masterpiece!
In honour of Men’s Health Week in June, I will be partnering with the Blue Tree Project, raising funds to help break the stigma surrounding mental health.
The Blue Tree Project is a charity that helps spark difficult conversations about mental health. They spread the message that “it’s OK to not be OK”, through placing their signature blue paint around Australia.
To help this incredible charity, I will be donating all my profits made from the launch of my Truffle Butter Cookies to the Blue Tree Project. The launch will be on the 6th of June and can be picked up on the 16th of June.

Santini Bar & Grill is bringing together four of WA’s top chef’s for a noteworthy night of dining to whet the appetite and warm the soul. Santini will be hosting a four course degustation in support of the Healthy Mind Menu Charity – an organization that helps identify and address mental health issues in the workplace and investigate ways to better support the mental wellbeing of WA’s hospitality industry staff.
Some of Perth's best chefs, producers and winemakers have come together to create an all inclusive dinner to help raise much needed funds for the millions of displaced children in Yemen.
Throughout my career in hospitality, I have experienced and met others along my journey who have struggled with mental health whether that be from the industry itself or from their walks of life. Everything ends up being connected.
Then coming across Healthy Mind Menu, I resonated with their values and message of striving to improve the lives for those working in hospitality in WA by building a community as it can be a high-pressure and competitive environment. From closely working with them I quickly became a proud committee member, which I am proud to be a part of to help share and give more awareness to this organisation.

Project WOMN fundraising for Anglicare WA street connect and Amanda took part in the Central Park Plunge. The Central Park Plunge is a 220 metre abseil down the Central Park Tower to raise funds to support families and kids who face exceptional challenges.
With over a decade of global experience working in leading
restaurants and dessert bars, Perth-born and Singapore-raised Amanda Yong joined Cooee as an integral member of the pre-opening team, crafting the exquisite pastry offering and later undertaking the Sous Chef position.
Co-founder of Project WOMN, an initiative based on a series of pop-up charity food and wine pairing dinners in Perth featuring all women chefs and entrepreneurs in WA, where we worked alongside with WA wine and food producers. For each of the pop-up seasonal dinners, we donated a substantial amount of the proceeds to a selected woman charity. In addition, during each night, the event will be presenting a specially curated menu, paired with wines from partnering wineries.
Past partners and charities include Zonta House Refuge Association, Gynae Awareness Information Network, Anglicare WA Young Hearts, Woodlands Winery, Cullen Wines and Plantagenet Wine.
We raised a total of $51,665.85 across the 3 events.

Funds raised from the night will help Variety provide practical equipment and experiences for Western Australian children who are sick, disadvantaged or have special needs, empowering them to live, laugh and learn
